By using the appropriate config for each. To get ts http streaming set mux request field.
Probably better to try asking questions on IRC or forum first rather than submitting bug reports. We've already accepted that documentation needs updating and will be main ffocus beyween now and release.

My view is that you should not even hav to read the doc tp get a good software running...

Looked through all the GUI item and did not even see what you mention.

DVR configuration tab has a container format drop down selection for changing the default (or by profile) recording container.
Changing HTTP streaming requires a query param as there is no means of altering the default in the UI. Append ?mux=pass to the URL when requesting HTTP video stream.
Some work might be needed to tart up the UI to allow TS streaming from links on the UI, but generally this is not that widely used as most users are streaming via HTSP to XBMC or Showtime. So any input on this (PRs etc..) always welcome.
