Freesat spoken audio

I have a dvb-t and a dvb-s tuner hooked up to my TVs headend and I've noticed that on recordings from the dvb-s source there is spoken commentary over the top of the normal audio. Is there and way to disable this??

If you're using 4.0.7 add an audio stream filter and set eng as exclusive. Narration generally is set as NAR.
For example:
You could also set your client to remember what audio stream to use as default too.

I record all to a mapped drive which is then streamed via a plex server.

Mmm, but the point is that you can either select NAR and exclude it, or - as above - select ENG and use it exclusively. I'd probably go for the former, as badly-tagged streams would mean no audio at all on the latter, although many NAR streams appear as UND when I strip them out. Where you record them to doesn't matter, this would alter the file as it's recorded and that's it for good.
Of course, it also depends on your playback client - you only mention Plex server, but Kodi and VLC (as examples) allows you to switch between the audio streams on demand. I'm sure you can do the same if you're using something else.

I use lg and Samsung smart TV's for clients. and also plex clients on ipad and Samsung tab if that's any help.

Nope, not really!
It's simply a matter of "if those clients allow you to choose a different audio stream - choose it; if they don't - use the steps above to filter out the audio description track".
