Recommended container format?
For me it seems like that there is no media container format that can hold all streams that are transmitted over satellite signal.
Matroska (.mkv) has support for many codecs but it doesn't support Teletext (which is a deal breaker for me, because I don't like working with Image subtitles) and it doesn't encorporate livestreams easily (you can't really watch an MKV file while it's being recorded and things like change of aspect ratio aren't handled as reliabe).
MPEG-TS (.ts) supports Teletext and works very well for livestreams but it's timestamps are sometimes broken, it doesn't support Textsub (like SRT) and it can't hold metadata like chapters, so it's not really a good option either.
So, now I'm curious what you guys use and if there's maybe a better option, that would (at least partially) solve my issues.
Thanks in advance.

I am using the following settings (DVB-C). I can enable/disable subtitle on each client (but are Subtitle steams). My provider is offering support for teletext.
What container is used in the original stream? Filter the streams not needed and keep only what is needed.
Another option is to pipe through ffmpeg ... so you can have 'ffmpeg flexibility' but you can't use HTPS (you are forced to use HTTP).

The original stream is DVB-S2 and the original software for my tuner uses MPEG-TS so that must be it. I see that you're using Matroska but I already mentioned that it can't store teletext.
