How to add composite in

I use my Hauppauge Nova-S-Plus with tvheadend for my DVB tuning

How do I add my Input #2: S-Video input to tvheadend? I have a DVD player plugged into it and want to stream that to my XBMC frontend.

tvheadend only supports analog capture cards that have their own MPEG encoder onboard.
As you can see from your log:

[WARNING]:v4l: /dev/video0: Device lacks MPEG encoder, device skipped

Your device does not have an MPEG encoder .. so that it why it is not used. SO there is nothing you can do to get this supported except getting an other card that does have a MPEG encoder.
