How to map service if channel name does not exist?

I have TVH 4.2.6 running well using my TBS6025 card to pick up Freeview. But I'm missing some channels in the EPG and I don't understand how to map them.
For example in Configuration / Services I can see the Al Jazeera Eng HD service but the Channel column is blank. If I select to edit the service, the only Channels I seem able to use are selected from a pre-existing list that does not include Al Jazeera. Why is the list of channels incomplete and how can I add the missing ones? I looked at Help but don't understand it.
Also, I have both BBC NEWS and BBC NEWS HD services mapped to BBC NEWS channel. Is that correct? What should I do about BBC ONE? I'd normally like to watch the HD version, but obviously can't when regional programmes are being transmitted. How can I set that up so I can record the correct service for the programme?

Replying to myself since I've made some progress ...
Firstly and just to be clear, in my earlier message I meant Configuration / DVB Inputs / Services.
Apparently the place to create Channels is in Configuration / Channel/EPG / Channels.
It would be helpful if the Help for Services told me that.
What I don't understand is the logic. In order to create a channel, I need the local channel number, which is on the Services page, and then I have to find the service in a pulldown, which is listed in mux order. Now I find it easy to remember the name of the channel/service that I'm looking for, but not easy to remember either the channel number or the mux frequency it is on. So why do I have to go to the Channels page to create a new channel when all the information I need is actually on the Services page? Why isn't there a box to tick when I edit the Service in fact - 'Create New Channel'?
My questions about mapping BBC channels remain. Thanks.

From Configuration -> DVB Inputs -> Services, select the service you want to create a channel for, then at the top of that page choose Map Selected -> Map Selected Services. Click Map Services on the dialog box and the channel will be created.
Re BBC ONE channel, there is AFAIK no way for TVH to know that a regional variant of the service is on 'opt-out' and to switch to it. If you want to be able to record the regional opt-outs you will have to create a separate channel for the SD version and record from that.

Thanks for that. Not immediately obvious to me why that should work but it does. It seems to require a leap of faith beyond me

Thanks. They're not so much opt-outs as the only programme available. The HD channel transmits a static apology picture for the duration.
But it's sensible to connect both BBC NEWS and BBC NEWS HD to the same channel? TVH knows that the HD channel is preferred and it should only use the SD one if there's a problem with reception of the HD version?

Yes, but you have to specify your preference by setting the Priorities on the two services, ie make the priority on the HD service higher than the SD one.
