What are Bouquet's - and Should I rebuild setup completely after upgrading from 3.4 to 3.9?

Hi All,
Been running tvheadend as my main tv receiver for a couple of years now.
Having just upgraded my multiple machines to Kodi, and moved my tvh server to another room, I figured it would be a good time to upgrade to 3.9.
Upgrade went fine and I'm still getting TV as normal.
However, I see quite a bit more in the setup area and I'm wondering what a few new things are.
1) What are bouquets... What are they for, what do they do and should I be doing something with them?
2) Within the adapter config, I see a few LNB configs.. with Universal LNB first. What are these for? (I just have a regular Sky Quad LNB)
3) Is it worth clearing the whole setup directory (after backup) and rebuild completely. How is that different to the old setup process.

1. Bouquets are groups of channels - most of the definitions are to group e.g. UK Freesat channels together rather than simply seeing everything that a satellite broadcasts. You don't have to do something, but it's a quick way of suppressing irrelevant channels if you want to.
2. Only worry about this if you're using a switch or a rotor (e.g. to share connections or to track different satellites). If you have a quad LNB that all points at Astra then you're safe to ignore it.
3. If it works, there's no hurry to delete anything. It differs from the old mechanism mostly in the way you set up the relationship between tuners, networks, services and channels - they're now not one-to-one, so you can define "Astra" as a network, define the muxes, map it to multiple tuners and then populate it with services/channels. You basically end up with 'any of these tuners can get any of these channels' instead of 'this channel is on this tuner, but there's an identical channel on that tuner over there'.

Makes me think that I should rebuild now though, as I probably have slightly different mappings on both of the tuners.. and I spend far too long (well, last night anyway) looking to see if I'm missing any channels etc.
I'm also seeing 2 x Astra networks against both tuners.. which makes me think I have a duplication in there.
Is there any up-to-date documentation for an initial setup (as it now differs so much compared to 3.4).
Logically then, I'll use a Bouquet for Anglia (W) for UK FreeSat.. and I won't need to spend as much time figuring out which feed I need to to avoid scottish and welsh advertising :-)

Yes, you've duplicated - you only need one network definition that you then map to both tuners. And yes, you've got the idea on bouquets - it helps re-file the plethora of BBC regions, if not the ITV ones as well.
In my experience, the hardest part of rebuilding from scratch is all the DVR rules I've collected. Icon support is much improved, so some time on naming those or grabbing picons pays back quickly when it comes to mapping those over, and after that it's pretty plain sailing.

Complete Scan
Pick the Bouquet & auto map.
Add the any missing non-bouquet channels (PCNE Chinese)
Fire up Kodi to take a look - hey presto. Fantastic.

All you need now is Dave on Freeview so you can watch endless re-runs of Clarkson, Hammond and May

Joking aside (because Dave and Top Gear are rich and bottomless seams to mine, after all...), DVB-T2 does give you things like C4+1 and 4Seven in HD, so it's not a bad idea if you have the aerial.
Personally, my DVR is endlessly set for Jamie Oliver and Power Rangers... <sigh>

So what do you see in Kodi? How is the visualization different?
