What is the best platform for a dedicated Tvheadend server?

That fully depends upon your required hardware. Other things to consider are budget, frontends, network topography/layout ... it's wildly subjective.

I'm just referring to Tvheadend as a server using a single DVB-S2 USB adapter....
Has anyone compared LibreELEC to various other Linux distributions... Arch, Debian, Ubuntu etc

The OS is Linux. Linux is the kernel. Kernel handles all the hardware. Arch, Debian, Ubuntu, all use the same Linux kernel. A few distros use patched kernels, like Kali has patched the kernel for packet injection. It is still Linux. Best setup for a server is less cruft, no GUI, no unnecessary daemons running. (BTW, daemons are called services in Poettering world.)

The kernel is Linux, yes; the OS is defined by the kernel and all of the other supporting software. Debian, Ubuntu, Arch, &c., are all different Linux-based OSes. When choosing an OS, there are lots of other things to consider, including your own familiarity with the software tools used by a particular OS.
As far as LibreELEC goes, the best advice I can give you is STAY AWAY. The software included with it is minimal at best, and horribly frustrating and limiting at worst. Its system files are read-only, so configuration requires odd workarounds. Also hardware support cannot be expanded beyond what they support by default.
It should be noted that Tvheadend also runs on FreeBSD (or possibly most BSDs), so there are quite a few options when it comes to OS selection.
In short, OS choice is personal. What I think is best may not be best for you ...

Thanks for the advice about LibreELEC. However, in my experience, it is the easiest to set up, but I will start using Arch for the time being... My aim is to use FreeBSD which I know will run Tvheadend, as long as there are drivers for your hardware. Unfortunately, I can't get it working with my PCTV DVB-S2 USB adapter even though it is supposed to be supported.
