Upgrading from 4.0 to 4.2 on Xenial

Apologies if this is a stupid question:
Is upgrading to 4.2 as simple as editing my sources.list to point to the "release" branch (currently it points to "stable") and updating/upgrading? Is there anything else I need to do?

You need to change to either "release-4.2" or pick "stable-4.2" which includes fixes to the code not in "release-4.2".
BACK UP YOUR CONFIG FIRST!

Am I right in thinking there's no way to back up the config via the web interface and, instead, I just copy the .hts folder (remembering to preserve ownership and permissions)?

Yes. However TVH should also do a backup after the upgrade, but it's better to be safe.
