It sounds like your muxes are being determined during the frequency scan, right? At that point, you should head over to your "services" tab and fill in the missing pieces BEFORE you "map dvb to channels". The trick here will be to fill in the "Channel Name" column for any channels that didn't get automatically determined from the frequency scan. This can be quite a few of them depending on your tv provider (I had to fill in 100-200).

I have a HDHomeRun prime and was able to determine the Channel for each service by having the hdhomerun prime scan a tuner into a txt file. I then had to use a combination of the "Multiplex" column, which shows the frequency, and the URL in the "play" column to determine the actual channel.

The other trick was to realize that the last 4 characters in the URL in the "Play" column is the "Program" from the scan file (a program/frequency combination is a tradition channel)... and its in hexidecimal, which you will need to convert. You can use libreoffice spreadsheets with the formula =hex2dec(<hex>), or any number of online hex to decimal converters.

Tricky and Tedious... yep.. but it pales in comparison to the tediousness of mapping your xmltv epg data to the channel once your "Map dvb to channels". Set aside a couple of hours for that headache since the drop down in tvheadend isn't sorted.
